I live and cook near one of the great fruit-growing regions of our country: southwest Michigan. For over two decades, we’ve worked with Klug Family Farms, celebrating the flow from spring through summer to fall with hundreds of flats and cartons and crates of several dozen different fruits. Macerated in blanco tequila, they give up their flavor and pinkish-red blush within a few days, creating a tequila that simply dances on your tongue.

That’s what escapes into a tube that coils through a water bath, cooling the vapor to the point that it condenses into a potent clear liquid—nascent tequila—redolent of the roasted agave heart that gave it life.
